Cal-Organic Produce

I've really been into organic produce lately, but it seems like I stick with the same things - apples, carrots, potatoes. This time, I wanted to try something new. So we bought some kale. I know, I know what most of you are thinking! Kale? Ewwww. But you know what, it is really not so bad. We used a recipe recommended from the Grimmway Farms website.

Kale Pasta
Sautéed bell peppers, tomatoes and kale are tossed with whole wheat pasta and sprinkled with a generous amount of crumbled feta cheese. Add chopped olives if desired.

Prep Time: 15 minutes | Cook Time: 30 minutes | Serves: 4 servings
Ingredients:
• 1 cup(s) kale, chopped
• 1 tbsp olive oil
• pinch cayenne pepper
• salt and pepper to taste
• 8 oz whole wheat pasta
• 1 bell pepper - red, chopped
• 1 bell pepper - yellow, chopped
• 2 roma tomatoes, chopped
• 4 garlic cloves, chopped
• pinch basil, dried
• 8 oz feta cheese, crumbled 

Instructions:
1. Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
2. Heat oil in a skillet over medium heat. Stir in red pepper, yellow pepper, kale and garlic. Season with basil, cayenne pepper, salt and black pepper. Cook until vegetables are tender.
3. In a large bowl, toss cooked pasta with skillet mixture. Sprinkle with feta cheese to serve. 

It is really really good, and even the kiddo liked it, can you believe it? So, I got experimental, and my family loved it! How cool is that?
